Description
Globe artichoke is a perfect example of “food as medicine” with both herbal and dietary use of the plant offering health benefits, including cholesterol metabolism and regulation.
Technically a type of thistle native to the Mediterranean area, it has been used in both culinary and medicinal worlds dating back to Ancient Roman and Greek times, whose people considered artichokes to be a delicacy and aphrodisiac. Common medicinal benefits include: a liver tonic, to improve digestion, relieve nausea, antispasmodic, maintain normal cholesterol levels, antioxidant, a good source of inulin. It has a mild, asparagus flavour and is high in vitamins and minerals.
